Tuna and Veggie Cucumber Boats

Ingredients

  • 1 (5 ounce) can chunk light tuna in water, drained
  • 1/4 cup chopped carrot
  • 1/4 cup chopped celery
  • 1/4 cup chopped broccoli
  • 3 tablespoons low-fat plain Greek-style yogurt
  • 2 tablespoons diced red onion
  • 1 tablespoon mayonnaise
  • 2 cucumbers, halved lengthwise and seeded

Directions

Mix tuna, carrot, celery, broccoli, yogurt, red onion, and mayonnaise together in a bowl; spread into the cucumber halves.
