Ingredients
- 2 cups all-purpose flour
- 4 1/2 teaspoons sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg, beaten
- 1 cup buttermilk
- 1/3 cup butter, melted
- 2 teaspoons spicy brown mustard
- 1/8 teaspoon hot pepper sauce
- 1 cup shredded Cheddar cheese
Directions
In a large bowl, combine the first five ingredients. Combine the egg, buttermilk, butter, mustard and hot pepper sauce; stir into the dry ingredients just until moistened. Fold in the cheese.

Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 15-20 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate any leftovers.
