Chicken Curry Salad in a Hurry

Ingredients

  • 1 rotisserie chicken, meat and skin removed and chopped
  • 2 hard-cooked eggs, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup chopped apple
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 1 teaspoon curry powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • Salt to taste

Directions

Mix the chicken, eggs, mayonnaise, apple, celery, onion, curry powder, paprika, cayenne pepper, and salt in a large bowl. Cover and refrigerate for 1 hour before serving.
