Ingredients
- 1/2 pound ground beef
- 3/4 cup chopped onion
- 1/2 teaspoon garlic, minced
- 1 (14.5 ounce) can whole peeled tomatoes, undrained and chopped
- 1 cup water
- 1 (5.6 ounce) package Knorr Fiesta Sides – Spanish Rice
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin (optional)
- 1 cup red kidney beans, rinsed and drained
Directions
Cook ground beef, onion and garlic in 12-inch skillet over medium-high heat, stirring occasionally, 5 minutes or until browned; drain. Stir in tomatoes, water, Knorr(R) Fiesta Sides(TM) – Spanish Rice, chili powder and cumin and bring to a boil. Reduce heat to low and simmer, stirring occasionally, 10 minutes or until rice is tender. Stir in beans and heat through. Top, if desired, with shredded Cheddar cheese and crumbled corn muffins.
