Sweet Potato Hummus

Ingredients

  • 2 sweet potatoes, peeled
  • 1 (14 ounce) can garbanzo beans, drained and rinsed
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1 teaspoon ground cumin
  • Salt and ground black pepper to taste

Directions

Place sweet potatoes on a microwave-safe plate; cook in microwave until tender, about 15 minutes. Cut sweet potatoes into cubes.
