- 1 cup stone-ground cornmeal
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 2 eggs
- 2 cups buttermilk
- 1 tablespoon oil, or as needed for greasing
Directions
Whisk flour, cornmeal, baking powder, baking soda, and salt together in a bowl. Add 1/3 cup vegetable oil, eggs, and buttermilk and whisk until batter is well blended.
