Roasted Rosemary Onion Potatoes

Ingredients

  • 1 small onion, finely chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 1/3 pounds potatoes, cut into 1-inch chunks

Mix onion, vegetable oil, rosemary, thyme, salt, and pepper in a large bowl; add potato pieces and toss to coat. Spread potatoes into prepared pan in a single layer.
