Fresh Avocado Burrata Salad

Ingredients

  • 1 (5 ounce) package baby arugula
  • 4 ounces prosciutto, torn into small pieces
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 (4 ounce) ball burrata cheese
  • 1 large avocado – peeled, pitted, and sliced
  • 1 small Roma tomato, diced
  • Salt and ground black pepper to taste

Directions

Toss baby arugula, prosciutto, olive oil, and balsamic vinegar together in a bowl. Transfer to a large serving plate using tongs. Place ball of burrata cheese in the center. Arrange avocado slices around plate and scatter tomato on top. Sprinkle with salt and ground black pepper.
