Ingredients
- 2 teaspoons vegetable oil
- 1/2 cup diced onion
- 1/4 cup minced carrot
- 1/4 cup diced fresh shiitake mushrooms
- 1 (12 ounce) package firm tofu, crumbled
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
- 1/8 teaspoon sea salt, or to taste
- Freshly ground black pepper to taste (optional)
Directions
Heat oil in a skillet over medium heat; saute onion until softened, about 2 minutes. Add carrot to onion and saute until slightly softened, about 2 more minutes. Add mushrooms to onion mixture and saute until mushrooms are slightly tender, about 2 more minutes.
