Easy Lentils Side Dish

Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1 potato, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 tablespoons minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onion

Directions

Combine lentils and water in a saucepan over medium heat; bring to a boil and cook about 20 minutes.
