Vegan Chilean Salad

Ingredients

  • 10 pounds roma tomatoes, sliced, or to taste
  • 4 red onions, sliced
  • 2 tablespoons salt
  • 2 tablespoons freshly ground black pepper
  • 2 cups olive oil
  • 1 1/2 cups lemon juice
  • 1 1/2 bunches fresh cilantro, chopped

Directions

Arrange tomatoes and onions on a large platter. Season with salt and black pepper.
